  1. Spiralizing the Zucchini

With my handy spiralizer, I turned fresh zucchini into thin, spaghetti-like strands in just minutes. For best results, use medium-sized zucchinis with firm skin.


  1. Quick Boil

Zucchini noodles cook quickly, so I boiled them for just one minute. This process softens the noodles slightly while keeping their texture intact.


  1. Miso Vegetarian Broth

A rich, umami-packed miso broth is the perfect base for zucchini noodles. I combined our miso tare seasoning, home made vegetable broth and a touch of sesame oil for a comforting and flavorful broth.


  1. Toppings

No bowl of ramen is complete without toppings. We use the traditional ramen toppings including a couple of pieces of toasted tofu, wood ear mushroom, menma bamboo shoots, chopped scallion and a few slices of nori seaweed. A soft-boiled egg is added for an extra boost of protein.
