Summer is around the corner, and while we love a hot bowl of ramen, sometimes we just need something cool, refreshing, and packed with umami. That’s where Cold Miso Noodles come in! This dish delivers all the savory depth of traditional ramen but with a chilled, zesty twist that makes it the perfect warm-weather meal.


Fresh Noodles, Made from Scratch


Nothing beats homemade noodles, and they’re easier to make than you think! For this recipe, you’ll need:


  • 90g flour

  • 33g water

  • 3g lye water

  • 1g salt


Start by mixing all the ingredients in a stainless steel prep bowl, then squeeze them into a ball. Flatten the dough and feed it through a pasta roller to knead seven times. Next, roll it thin to setting 4 on your pasta machine, then cut into perfect strands.


To cook, drop the noodles into boiling water for 60 seconds, then strain and rinse them under cold running water to stop the cooking process. This gives them that perfect chewy texture—essential for a great bowl of cold noodles!


Miso Dressing: The Flavor Bomb


A great sauce is what brings everything together, and this miso-based dressing is packed with umami, spice, and citrusy brightness. Here’s what you’ll need:


  • 1 tbsp miso tare (recipe here)

  • 1 tbsp rice vinegar

  • 1 tbsp chili oil

  • 1 tbsp sesame oil

  • Freshly grated ginger

  • A sprinkle of yuzu powder for that citrus kick


Simply mix everything in a small bowl and set aside.
